Easy One-Pan Mediterranean Chicken and Vegetables

A quick and healthy one-pan meal featuring juicy chicken thighs and fresh Mediterranean vegetables infused with lemon, oregano, and garlic flavors.

  • 4 boneless, skinless chicken thighs (or breasts if preferred)
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano (or 1 tablespoon fresh, chopped)
  • Juice of 1 large lemon (about 3 tablespoons)
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 medium red bell pepper, sliced into strips
  • 1 medium zucchini, sliced into half-moons
  • 1 small red onion, cut into wedges
  • 1 cup cherry tomatoes, halved
  • Β½ cup pitted Kalamata olives (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a small bowl, mix olive oil, minced garlic, lemon juice, oregano, smoked paprika, salt, and pepper. Place chicken thighs in a shallow dish or zip-top bag and pour marinade over them. Let sit for at least 10 minutes at room temperature or up to 2 hours in the fridge.
  2. Preheat oven to 400Β°F (200Β°C).
  3. Heat a sturdy, oven-safe skillet over medium-high heat. Add chicken thighs skin-side down or the side that will contact the pan. Sear until golden brown, about 4-5 minutes per side without moving too soon.
  4. Nestle bell peppers, zucchini, onion wedges, cherry tomatoes, and olives around the chicken in the pan. Pour any leftover marinade over the veggies. Toss gently to coat evenly without disturbing the chicken.
  5. Transfer skillet to the preheated oven. Roast for 20-25 minutes until chicken reaches an internal temperature of 165Β°F (74Β°C) and vegetables are tender and slightly caramelized.
  6. Remove from oven and let chicken rest for 5 minutes. Sprinkle chopped fresh parsley on top before serving.

Notes

Marinate chicken for at least 10 minutes for better flavor and tenderness. Avoid overcrowding the pan to ensure proper browning. Use room temperature chicken for even cooking. Watch oven temperature to prevent drying out the chicken. If using chicken breasts, reduce roasting time accordingly.
