Easy One-Bowl Pumpkin Banana Bread (No Mixer)

This incredibly moist, perfectly spiced pumpkin banana bread comes together in one bowl with no mixer. It’s the perfect fall baking secret weapon for busy mornings or cozy cravings.

  • 2 medium ripe bananas (mashed, about 1 cup)
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 1/3 cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • Optional: 1/2 cup chocolate chips, 1/2 cup chopped walnuts or pecans, 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease exposed sides.
  2. In a large mixing bowl, mash bananas with a fork until mostly smooth (a few lumps are fine).
  3. Add pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and glossy, about 30 seconds.
  4. Add flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon on top of the wet mixture. Do not stir yet.
  5. Using a spatula, gently fold dry ingredients into wet until just combined (a few streaks of flour are okay). If using add-ins, fold them in now.
  6. Pour batter into prepared loaf pan and spread evenly. Tap pan gently on counter to release air bubbles.
  7. Bake for 50-60 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  8. Cool in pan for 10-15 minutes, then lift out using parchment handles and transfer to a cooling rack. Cool completely before slicing (about 1 hour).

Notes

Room temperature eggs are important for a smooth batter. Don’t overmix or the bread will be tough. Let the bread cool completely before slicing for best texture. The flavors develop even more on day two.
