  1. Mix the dry ingredients: In a large mixing bowl, whisk together 3 cups (360g) of all-purpose flour, 1/4 teaspoon of instant yeast, and 1 1/4 teaspoons of salt.
  2. Add the water: Pour in 1 1/2 cups (360ml) of lukewarm water and stir with a wooden spoon until a sticky, shaggy dough forms.
  3. Cover and let rise: Cover the bowl tightly with plastic wrap or a damp kitchen towel. Leave it on your countertop overnight (12 to 18 hours) until the dough has doubled in size and bubbles appear on the surface.
  4. Preheat the oven and pot: Place your Dutch oven with its lid inside the oven and preheat to 450Β°F (230Β°C) for at least 30 minutes.
  5. Shape the dough: Lightly flour a clean work surface and turn the dough out gently. Fold the edges into the center to form a rough ball. Place the dough seam-side down on a piece of parchment paper.
  6. Bake the bread: Carefully remove the hot Dutch oven from the oven. Lift the dough on the parchment paper and place it inside the pot. Cover with the lid and bake for 30 minutes. Then remove the lid and bake for another 15-20 minutes until the crust is deep golden brown and crackly.
