  • 1216 soft-baked cookies (such as soft sugar cookies or shortbread cookies)
  • ¼ cup crushed graham crackers or toasted almonds (optional, for rolling edges)

Instructions

  1. Prepare the Peaches: If using fresh peaches, wash, pit, and roughly chop. If using frozen, thaw for 15-20 minutes and drain excess liquid. Place peaches in a food processor or blender with vanilla extract and lemon juice. Pulse until smooth. Set aside.
  2. Whip the Cream: Pour cold heavy cream into a large, clean mixing bowl. Using an electric mixer, beat on medium-high speed until stiff peaks form, about 3-5 minutes. Be careful not to over-whip.
  3. Fold in the Condensed Milk: Pour sweetened condensed milk into the bowl with whipped cream. Gently fold with a rubber spatula until just combined. Keep as much air in the mixture as possible.
  4. Add the Peach Puree: Pour peach puree over the cream mixture. Fold gently until evenly distributed. Leave slightly streaky for a marbled effect if desired.
  5. Freeze the Ice Cream: Line a 9×5-inch loaf pan with parchment paper, leaving overhang. Pour mixture into pan, smooth top, cover surface directly with plastic wrap, then cover pan with another layer of plastic wrap or foil. Freeze for at least 6 hours, preferably overnight.
  6. Assemble the Sandwiches: Remove frozen ice cream from pan using parchment overhang. Place on cutting board and cut into rectangles matching cookie size (about 2×3 inches). Place a piece of ice cream on flat side of one cookie, top with another cookie, and gently press. Roll edges in crushed graham crackers or almonds if using.
  7. Freeze Again: Place assembled sandwiches on a parchment-lined baking sheet and freeze for at least 1 hour. Wrap individually in plastic wrap and store in an airtight container for up to 2 weeks.
