These no-bake peanut butter energy balls are quick, easy, and perfect for a healthy snack on the go. They combine creamy peanut butter, rolled oats, honey, and dark chocolate chips for a chewy, satisfying treat.

Ingredients

Scale
  • 1 Β½ cups (135g) rolled oats
  • ΒΎ cup (190g) natural creamy peanut butter
  • ΒΌ cup (85g) honey
  • Β½ cup (90g) dark chocolate chips
  • 1 teaspoon vanilla extract
  • 2 tablespoons ground flaxseed (optional)
  • Pinch of salt

Instructions

  1. Measure out all ingredients: rolled oats, peanut butter, honey, dark chocolate chips, vanilla extract, ground flaxseed (if using), and salt.
  2. In a large mixing bowl, combine peanut butter, honey, and vanilla extract. Stir vigorously until smooth and creamy, about 2 minutes.
  3. Add rolled oats, ground flaxseed, salt, and dark chocolate chips to the wet mixture. Stir gently but thoroughly to coat the oats and evenly distribute the chocolate.
  4. Pinch a small amount of mixture and roll it between your fingers to test. If it holds together without crumbling, proceed; if not, add a little more peanut butter or honey.
  5. Roll the mixture into 1-inch (2.5 cm) balls using wet hands to prevent sticking. Place the balls on a baking sheet or plate lined with parchment paper.
  6. Refrigerate the energy balls for at least 30 minutes to firm up and allow flavors to meld.
  7. Serve chilled or at room temperature. Store any extras in an airtight container in the refrigerator for up to one week.

Notes

Use natural peanut butter without added sugar or hydrogenated oils for best texture. Wet your hands before rolling to prevent sticking. Chilling is crucial for firm texture and flavor melding. For quicker firming, freeze for 10-15 minutes instead of refrigerating. Variations include swapping peanut butter for almond or cashew butter, adding spices, seeds, or protein powder. Store in airtight container in fridge up to one week or freeze up to three months.
