  • 1/3 cup honey (113g)
  • 1/2 cup natural peanut butter (125g)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 2 tablespoons chia seeds
  • 1/4 cup mini chocolate chips (45g, optional)
  • Pinch of sea salt

Instructions

  1. Gather all ingredients and measure precisely.
  2. In a mixing bowl, combine the rolled oats, chia seeds, cinnamon, and sea salt. Stir to distribute evenly.
  3. Add the peanut butter, honey, and vanilla extract to the dry mix. Mix thoroughly until a uniform dough forms.
  4. Fold in the mini chocolate chips gently.
  5. Using your hands or a small cookie scoop, shape the mixture into 1-inch (2.5 cm) balls. Press firmly but not too hard.
  6. Place the formed bites on a parchment-lined baking sheet or plate, leaving space between each.
  7. Chill in the refrigerator for at least 30 minutes to firm up.
  8. Once chilled, transfer the energy bites to an airtight container. Store in the fridge for up to one week or freeze for longer keeping.

Notes

If mixture is too wet, add more oats. If crumbly, add more honey or peanut butter. Wet hands slightly to prevent sticking when rolling. Chilling is essential for firm bites. Can substitute almond butter for peanut butter and maple syrup for honey for vegan version. Use gluten-free oats if needed.
