  • ¼ cup (60ml) unsalted butter, melted and slightly cooled
  • 1 cup (120g) diced ham (thick-cut deli ham recommended)
  • 1 cup (120g) shredded sharp cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin with cooking spray or butter.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and nutmeg.
  3. In a large bowl, whisk eggs until light and frothy, about 30 seconds. Add milk and melted butter, whisk until smooth.
  4. Pour dry ingredients into wet ingredients. Stir gently with a spatula until just combined (a few lumps are fine). Fold in diced ham and shredded cheddar until evenly distributed.
  5. Using a small cookie scoop or spoon, divide batter evenly among the 24 mini muffin cups, filling each almost to the top.
  6. Bake for 10-12 minutes, until tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
