These light and satisfying turkey and cheese roll-ups are perfect for lunchboxes or meal prep. With a creamy spread, fresh spinach, and roasted red peppers, they’re quick to make and packed with flavor.

  • 4 (8-inch) flour tortillas, room temperature
  • 6 oz light cream cheese, softened
  • 8 oz deli turkey breast, thinly sliced
  • 4 slices provolone cheese, thinly sliced
  • 1 cup fresh spinach leaves, washed and dried
  • 1/4 cup roasted red peppers, thinly sliced
  • Salt and black pepper to taste
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon garlic powder

Instructions

  1. Make the spread: In a small bowl, combine 2 oz softened cream cheese, Dijon mustard, honey, and garlic powder. Mix until smooth. Set aside.
  2. Prep your tortillas: Lay tortillas flat on a cutting board. If cold, microwave for about 10 seconds to make pliable.
  3. Spread the mixture: Spread about 1Β½ tablespoons of the cream cheese mixture evenly over each tortilla, leaving a half-inch border.
  4. Layer the turkey: Place 2-3 slices of turkey breast on each tortilla, overlapping slightly.
  5. Add the cheese: Lay one slice of provolone on top of the turkey.
  6. Add the veggies: Scatter a small handful of spinach leaves over the cheese, then add a few strips of roasted red pepper.
  7. Season lightly: Sprinkle a tiny pinch of salt and pepper over the filling.
  8. Roll it up: Starting from the edge closest to you, tightly roll the tortilla away from you, keeping even pressure. Press gently to seal.
  9. Wrap and chill: Wrap each roll tightly in plastic wrap or parchment paper. Refrigerate for at least 30 minutes.
  10. Slice and serve: Unwrap rolls and slice into 1-inch pinwheels using a serrated knife.

Notes

Don’t skip the chilling stepβ€”it helps the rolls hold their shape. Pat all ingredients dry to prevent sogginess. Use room temperature cream cheese for easy spreading. Slice with a serrated knife for clean cuts.
