  • 8 cups water (for baking soda bath)
  • ⅓ cup baking soda (for baking soda bath)
  • 1 large egg (beaten with 1 tablespoon water for egg wash)
  • Coarse sea salt or pretzel salt (for topping)
  • 2 tablespoons melted butter (optional, for brushing after baking)
  • 2 tablespoons unsalted butter (for beer cheese dip)
  • 2 tablespoons all-purpose flour (for beer cheese dip)
  • 1 cup whole milk (2% works too)
  • ½ cup beer (pale ale or lager recommended)
  • 2 cups sharp cheddar cheese (shredded fresh from a block)
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika (smoked paprika if available)
  • Salt and pepper to taste

Instructions

  1. Proof the yeast: In a large mixing bowl, combine warm water, brown sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining 2 cups of flour, ½ cup at a time, until a shaggy dough forms. Turn onto a floured surface and knead for 6-8 minutes until smooth, elastic, and slightly tacky.
  3. First rise: Place dough in a lightly greased bowl, cover with a clean towel or plastic wrap, and let rise in a warm spot for 1 hour until doubled in size.
  4. Shape the bites: Punch down dough and turn onto a floured surface. Divide into 4 equal pieces. Roll each piece into a 1-inch thick, 12-inch long rope. Cut into 1-inch pieces. Place on a parchment-lined baking sheet.
  5. Baking soda bath: Preheat oven to 425°F. Bring 8 cups of water and ⅓ cup baking soda to a boil in a large pot. Drop 5-6 pretzel bites into boiling water. Boil for 30 seconds, flip, and boil another 30 seconds. Remove with a slotted spoon and return to baking sheet. Repeat with all bites.
  6. Egg wash and bake: Brush each pretzel bite with egg wash (1 egg beaten with 1 tablespoon water). Sprinkle generously with coarse salt. Bake for 12-15 minutes until deep golden brown, rotating pan halfway through. Brush with melted butter while hot if desired.
  7. Make the beer cheese dip: While pretzels bake, melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute. Slowly pour in milk and beer, whisking continuously. Cook for 2-3 minutes until thickened. Reduce heat to low, add shredded cheddar, Dijon mustard, garlic powder, and paprika. Stir until melted and smooth. Season with salt and pepper. Keep warm until serving.
