Ingredients

Scale
  • 1 bag (13-16 oz) restaurant-style tortilla chips (e.g., Tostitos Scoops)
  • 1 lb ground beef (80/20)
  • 1 packet (1 oz) taco seasoning
  • 2 cups shredded Mexican blend cheese (or sharp cheddar)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sour cream
  • 1 cup fresh salsa or pico de gallo, drained
  • 1 cup guacamole
  • 1/2 cup pickled jalapeños
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, sliced
  • 1 large wooden cutting board or baking sheet (at least 12x18 inches)
  • Parchment paper or aluminum foil
  • Optional: football-shaped template

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheet or board with parchment paper.
  2. Cook the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and break it apart with a spatula. Cook for 6-8 minutes until browned and no longer pink. Drain excess fat. Add taco seasoning and 1/4 cup water. Stir and simmer for 2-3 minutes until thickened. Set aside.
  3. Shape the football: Arrange tortilla chips on the prepared baking sheet in a football shape (oval about 12 inches long and 8 inches wide at center). Don’t overlap too much.
  4. Layer the toppings: Spoon seasoned ground beef evenly over chips. Scatter black beans over beef. Sprinkle shredded cheese generously over everything.
  5. Bake the nachos: Place baking sheet in preheated oven and bake for 8-10 minutes, until cheese is fully melted and bubbly.
  6. Add the dips: While nachos bake, spoon sour cream, salsa, and guacamole into small serving bowls. Arrange them on the board around the football shape after baking.
  7. Finish with fresh toppings: Remove board from oven. Immediately sprinkle pickled jalapeños, sliced black olives, chopped cilantro, and green onions over melted cheese.
  8. Arrange and serve: Place small bowls of dips around the football-shaped nachos. Add extra chips around edges for dipping. Serve immediately.

Notes

For best results, shred your own cheese (pre-shredded has anti-caking agents that don’t melt as smoothly). Drain salsa and beans to prevent soggy chips. Use sturdy scoop-style chips. To make football laces, use a squeeze bottle or piping bag to draw two straight lines and a few short cross lines with sour cream on top after baking. For make-ahead: cook beef up to 2 days in advance; assemble and bake just before serving.
