A quick and easy fudgy brownie recipe using a box mix with simple pantry ingredients, perfect for satisfying chocolate cravings in under 30 minutes.

Ingredients

Scale
  • 1 box of brownie mix (recommend Ghirardelli)
  • 1/4 cup vegetable oil
  • 2 large eggs (room temperature; or 1/4 cup unsweetened applesauce per egg as substitute)
  • 1/4 cup cold water
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder (optional)
  • Optional mix-ins:
  • 1/2 cup chocolate chips or chunks
  • 1/4 cup chopped nuts like walnuts or pecans

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. Lightly grease an 8×8 inch baking pan or line it with parchment paper, leaving some overhang.
  3. In a mixing bowl, combine the brownie mix, vegetable oil, eggs, cold water, vanilla extract, and espresso powder if using.
  4. Stir gently but thoroughly until just combined; do not overmix.
  5. Fold in optional chocolate chips or nuts if desired.
  6. Pour the batter into the prepared pan and spread evenly with a spatula.
  7. Bake for 25-30 minutes, checking at 25 minutes. The edges should look set and a toothpick inserted near the center should come out with a few moist crumbs.
  8. Cool completely on a wire rack or chill in the fridge for 15 minutes to set.
  9. Cut into squares and enjoy. Store leftovers in an airtight container at room temperature or refrigerate.

Notes

Do not overmix the batter to avoid tough brownies. Use room temperature eggs for better texture. Adjust water and oil amounts to tweak fudginess. Optional espresso powder enhances chocolate flavor without coffee taste. Baking time may vary with pan size; check with toothpick. For dairy-free, use coconut oil and vegan mix. For gluten-free, use certified gluten-free mix and check mix-ins.
