  • 1/2 cup soy sauce
  • 1/4 cup mirin (or dry sherry as substitute)
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated (or 1/2 tsp ground ginger)
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp vegetable oil
  • 2 cups jasmine rice or long-grain white rice
  • 3 cups water or low-sodium chicken broth
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, peeled and julienned or thinly sliced
  • 2 green onions, sliced (for garnish)
  • Optional: sesame seeds for sprinkling

Instructions

  1. Rinse 2 cups of jasmine rice under cold water until water runs clear. Combine rinsed rice with 3 cups water or chicken broth in a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes. Turn off heat and let rice steam, covered, for another 10 minutes before fluffing with a fork.
  2. In a mixing bowl, whisk together soy sauce, mirin, brown sugar, minced garlic, and grated ginger until sugar dissolves.
  3. Heat vegetable oil in a large non-stick skillet over medium-high heat. Add chicken pieces in a single layer without overcrowding. Cook for 4-5 minutes on one side until golden, then flip.
  4. Pour the prepared sauce over the chicken, reduce heat to medium, and simmer for 8-10 minutes, stirring occasionally until chicken is cooked through and sauce slightly reduces.
  5. Stir in the cornstarch slurry and cook for another 2 minutes until the sauce thickens to a glossy consistency.
  6. While chicken simmers, steam broccoli florets and carrot slices until tender-crisp (about 4-5 minutes). SautΓ© bell pepper slices briefly if desired.
  7. Divide cooked rice evenly into 4 meal prep containers or bowls. Top with chicken and teriyaki sauce, then arrange steamed veggies on the side. Garnish with sliced green onions and sesame seeds if using.

Notes

Do not overcrowd the pan to ensure chicken sears properly. Marinate chicken briefly if possible for better flavor. Use chicken thighs for juiciness. Add cornstarch slurry at the end to control sauce thickness. Flavors improve after a day in the fridge. Reheat gently with a splash of water or broth to loosen sauce.
