  • 1/3 cup fig jam or fig preserves
  • 2 tablespoons honey
  • 1/4 cup walnuts, roughly chopped
  • 12 teaspoons fresh thyme leaves
  • Flaky sea salt (like Maldon) for finishing
  • Optional: 1-2 tablespoons balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle.
  2. Slice the baguette into 1/2-inch thick slices on a slight diagonal to get about 20-24 slices.
  3. Arrange the baguette slices in a single layer on a baking sheet. Bake for 5-7 minutes, flipping halfway through, until golden and crisp on both sides.
  4. While the bread toasts, toast the chopped walnuts in a small dry skillet over medium heat for 2-3 minutes until fragrant and slightly darkened. Transfer to a plate to cool.
  5. Soften the goat cheese by letting it sit at room temperature for 15-20 minutes or microwaving on low for 5-7 seconds.
  6. Let the toasted baguette slices cool for a minute. Spread each slice with a generous layer of goat cheese (about 1 tablespoon per slice).
  7. Top each with about 1/2 teaspoon of fig jam, spreading slightly but leaving some visible.
  8. Drizzle about 1/4 teaspoon of honey over each crostini.
  9. Sprinkle the toasted walnuts over the top, then finish with fresh thyme leaves and a tiny pinch of flaky sea salt. If using balsamic glaze, drizzle it on now.
  10. Serve immediately, ideally within 30 minutes of assembly.

Notes

For best results, let the goat cheese come to room temperature before spreading. Toast the bread until completely dry to prevent sogginess. Assemble no more than 30-60 minutes before serving. The walnuts can be toasted in the oven alongside the bread, but watch them closely as they toast faster.
