  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chiles (undrained)
  • 1 can (15 oz) chili (e.g., Wolf Brand or Hormel with beans)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and black pepper to taste
  • 8 oz cream cheese, softened and cubed
  • 2 cups (8 oz) shredded sharp cheddar cheese
  • 1 cup (4 oz) shredded Monterey Jack cheese
  • 1/4 cup whole or 2% milk (plus more as needed)
  • 1 jalapeño, seeded and diced (optional)

Instructions

  1. Brown the beef and onions: Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook, breaking up the meat, until beef is browned and onion is soft (6-8 minutes). Drain excess fat if needed. Add minced garlic and cook 30 seconds until fragrant.
  2. Combine in the crockpot: Transfer beef mixture to a slow cooker. Add undrained tomatoes with green chiles, canned chili, chili powder, cumin, and a pinch of salt and pepper. Stir to combine.
  3. Add cream cheese: Scatter cubed cream cheese over the top (do not stir). Cover and cook on LOW for 1 hour.
  4. Stir in cheeses: After 1 hour, stir until cream cheese is mostly incorporated. Add shredded cheddar and Monterey Jack. Stir until completely melted and smooth (2-3 minutes).
  5. Adjust consistency: Stir in milk, starting with 1/4 cup, adding more as needed to reach desired consistency. The dip will thicken as it cools.
  6. Final seasoning: Taste and adjust salt, pepper, or chili powder. Stir in diced jalapeño if using.
  7. Keep warm and serve: Turn slow cooker to WARM setting. Serve directly from the crockpot with tortilla chips, pretzel bites, or veggies. Can stay on warm for up to 2 hours.

Notes

For best texture, shred cheese from a block rather than using pre-shredded. The cream cheese is essential for a smooth, stable dip—do not skip it. If dip thickens too much on warm, stir in a splash of milk or water.
