  • 810 medium fresh jalapeño peppers
  • 8 oz cream cheese, softened to room temperature
  • 810 slices standard-cut bacon
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
  • ¼ cup shredded cheddar cheese (optional)
  • Chopped chives or green onions for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil. Place a wire rack on top if available.
  2. Wash and dry jalapeños. Cut each in half lengthwise. Use a small spoon or melon baller to remove seeds and white membranes.
  3. In a small bowl, combine softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until smooth. Fold in shredded cheddar if using.
  4. Fill each jalapeño half with the cream cheese mixture, spreading evenly to the edges without overstuffing.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice around each stuffed jalapeño, starting at one end and spiraling to the other. Place seam-side down on the prepared baking sheet or wire rack. Secure with a toothpick if needed.
  6. Bake for 18-22 minutes, until bacon is crispy and golden brown. If not using a wire rack, flip bites carefully with tongs at the 10-minute mark.
  7. Let cool on the pan for 3-5 minutes. Transfer to a serving platter, garnish with chives or green onions if desired, and serve warm.

Notes

For best results, use room-temperature cream cheese and pre-cook bacon slightly (30-45 seconds in microwave) for easier wrapping. Remove all seeds and membranes for milder bites. Let bites rest 3-5 minutes before serving to avoid burning. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in a 350°F oven for 5-7 minutes or in an air fryer at 350°F for 3-4 minutes. Freeze unbaked or baked for up to 2 months.
