A quick and easy creamy Tuscan salmon skillet with a velvety sauce studded with sun-dried tomatoes and spinach, ready in just 20 minutes. Perfect for busy weeknights or impressing guests.

Ingredients

Scale
  • 4 salmon fillets (about 6 oz each), skin-on or skinless
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Β½ cup sun-dried tomatoes (packed in oil), drained and chopped
  • 1 cup heavy cream
  • Β½ cup low-sodium chicken broth
  • 3 cups fresh baby spinach
  • Β½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ΒΌ teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and black pepper. Let sit at room temperature for about 10 minutes.
  2. Heat a large skillet over medium-high heat and add the olive oil. Wait until the oil is shimmering and just starting to smoke.
  3. Place the salmon fillets in the skillet, skin-side down if using skin-on. Cook for 4-5 minutes without moving, until the edges are golden and the flesh releases easily. Flip and cook for another 2-3 minutes. Transfer to a plate and set aside.
  4. Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and chopped sun-dried tomatoes. Cook for about 1 minute, stirring constantly, until fragrant.
  5. Pour in heavy cream and chicken broth, stirring to scrape up browned bits from the bottom of the pan. Add Italian seasoning and red pepper flakes (if using). Let simmer for 2-3 minutes, stirring occasionally, until slightly thickened.
  6. Add fresh spinach in handfuls, stirring gently until wilted, about 1-2 minutes.
  7. Sprinkle grated Parmesan over the sauce and stir until melted and incorporated. Taste and adjust seasoning with salt and pepper.
  8. Return the seared salmon fillets to the skillet, nestling them into the sauce. Spoon some sauce over the tops. Simmer for 1-2 minutes to warm through.
  9. Garnish with fresh chopped parsley and serve immediately.

Notes

Pat salmon dry for a good sear. Do not overcrowd the pan. Watch garlic closely to avoid burning. If sauce is too thick, add a splash of broth; if too thin, simmer longer. Let salmon rest a few minutes after searing.
