Instructions

  1. Mash the banana: Peel the banana and place it in a medium bowl or directly in your jar. Use a fork to mash it until smooth, mostly liquid with a few small lumps.
  2. Add the wet ingredients: To the mashed banana, add the peanut butter, milk, Greek yogurt, maple syrup (if using), and vanilla extract. Stir well with a spoon or whisk until the peanut butter is fully incorporated, about 30 seconds.
  3. Mix in the dry ingredients: Add the rolled oats, chia seeds, and salt. Stir until everything is evenly combined. The mixture will look thin—this is normal.
  4. Taste and adjust: Check sweetness and peanut butter flavor. Add more maple syrup or peanut butter if desired.
  5. Transfer to container: Pour the mixture into a mason jar or airtight container, leaving about an inch of space at the top for toppings.
  6. Refrigerate: Put the lid on tightly and refrigerate for at least 4 hours, preferably overnight.
  7. Serve the next morning: Take the jar out of the fridge and stir well. The texture should be thick and creamy. If too thick, stir in a splash of milk.
