  • 4 large ripe peaches, peeled and sliced
  • 1 cup full-fat Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 3/4 cup rolled oats
  • 1/3 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 6 tablespoons cold unsalted butter, cubed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Peel and slice peaches into 1/2 inch thick wedges. Toss with lemon juice, ground cinnamon, and 1 tablespoon honey or maple syrup. Drain excess liquid if too juicy.
  2. In a small bowl, mix Greek yogurt with 1 tablespoon honey or maple syrup until smooth.
  3. In another bowl, combine rolled oats, flour, brown sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in vanilla extract. Add a teaspoon of cold water if topping is too dry.
  4. Spread the creamy Greek yogurt evenly in the bottom of an 8×8 inch baking dish. Layer the spiced peaches on top evenly. Sprinkle the oat crumble topping over the peaches without pressing down.
  5. Bake for 35–40 minutes until topping is golden brown and peach filling is bubbly.
  6. Let cool for 10 minutes before serving. Serve warm with extra Greek yogurt or vanilla ice cream if desired.

Notes

Keep butter cold for a crisp topping. Don’t overmix the crumble to avoid toughness. Use firm ripe peaches to prevent watery filling. Let crisp rest before serving to thicken filling. Tent with foil if topping browns too quickly. Can substitute almond flour for gluten-free and coconut yogurt for dairy-free.
