Easy Cranberry Brie Bites – 5-Minute Appetizer

These Easy Cranberry Brie Bites are a quick and delicious appetizer made with just four ingredients. Perfect for holiday parties, game day, or any last-minute gathering, they come together in under 20 minutes with only 5 minutes of active prep.

  • 8 ounces (225g) Brie cheese, rind left on, cut into 24 small cubes (about 1/2 inch each)
  • 1/2 cup (120ml) cranberry sauce, preferably whole berry or homemade
  • 24 frozen phyllo cups (about 1 box)
  • Fresh rosemary or thyme, finely chopped, for garnish
  • Optional: Honey or maple syrup for extra sweetness

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Arrange the frozen phyllo cups on the baking sheet in a single layer, about 1 inch apart.
  3. Cut the brie into 24 cubes, each about 1/2 inch (1.25 cm) square. Leave the rind on.
  4. Place one brie cube into each phyllo cup. Don’t press it down.
  5. Spoon about 1 teaspoon of cranberry sauce on top of each brie cube.
  6. Bake for 10-12 minutes, or until the brie is melted and bubbly and the phyllo cups are golden brown around the edges.
  7. Remove from the oven and let them cool for 2-3 minutes on the baking sheet.
  8. Sprinkle with fresh chopped rosemary or thyme while they’re still warm. If adding honey, drizzle it now.
  9. Transfer to a serving platter and serve immediately.

Notes

Keep phyllo cups frozen until ready to fill. Cut brie while cold for clean cubes. Don’t skip parchment paper. Watch oven closely in last 2 minutes to prevent burning. For best results, serve immediately while warm and crispy. To reheat leftovers, use a 350°F (175°C) oven for 5-7 minutes; avoid microwave.
