  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup mixed nuts (roasted salted pecans and almonds)
  • 1 cup mini pretzels or pretzel sticks
  • 46 oz sharp white cheddar or aged gouda
  • Β½ cup dark chocolate chunks or chips
  • Β½ cup dried cranberries or cherries
  • Flaky sea salt (for finishing)
  • 1 tablespoon lemon juice (for apples)
  • Honey or maple syrup (optional drizzle)

Instructions

  1. Wash and dry 4-5 apples. Slice into thin wedges (about 8-10 slices per apple), removing cores. Toss with 1 tablespoon lemon juice to prevent browning. Set aside.
  2. Pour 1 cup caramel sauce into a microwave-safe bowl. Heat in 15-second bursts, stirring between, until pourable but not hot. Transfer to a small ramekin or serving bowl.
  3. Optional: Toast 1 cup mixed nuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant. Let cool.
  4. Cut 4-6 oz sharp white cheddar into small cubes or thin triangles. If using brie, leave in wedges. Let cheese sit at room temperature for 10 minutes before serving.
  5. Place the ramekin of warm caramel in the center or slightly off-center of a large wooden cutting board or serving platter.
  6. Arrange apple slices in a fan pattern around the caramel bowl, overlapping slightly.
  7. Scatter nuts, pretzels, cheese cubes, and dried fruit in the gaps around the apples.
  8. Sprinkle dark chocolate chunks or chips over the board. Optionally, melt a few tablespoons of chocolate chips with 1 teaspoon coconut oil and drizzle over apples and pretzels.
  9. Sprinkle a generous pinch of flaky sea salt over the entire board, especially on caramel and nuts.
  10. Add fresh herbs like rosemary or mint sprigs for color. Drizzle honey over cheese if desired.
  11. Serve immediately within an hour of assembling. Place small plates and napkins nearby.

Notes

Slice apples just before serving to prevent browning. Keep caramel warm if serving over an hour. For a nut-free version, replace nuts with roasted chickpeas or pumpkin seeds. For a vegan version, use dairy-free caramel and vegan cheese.
