  • 2 cans (15 oz each) black beans, drained and rinsed
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 cup Monterey Jack cheese, shredded
  • 4–5 green onions, sliced
  • 1 jalapeño, seeded and minced (optional)
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice, fresh
  • Tortilla chips for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Drain and rinse the black beans thoroughly.
  2. In a medium bowl, combine black beans, softened cream cheese, 1 cup shredded cheddar, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice. Mash with a fork until mostly smooth but with some bean chunks remaining. Stir in green onions and jalapeño if using.
  3. Spread the bean mixture evenly into a 9-inch pie dish or oven-safe skillet. Smooth the top with a spatula.
  4. Sprinkle the remaining 1 cup cheddar and the Monterey Jack cheese evenly over the bean layer.
  5. Bake for 12-15 minutes until the cheese is fully melted and the edges are bubbling. Optionally, broil for 1-2 minutes for a browned top.
  6. While the dip bakes, spoon sour cream into a small piping bag or zip-top bag and snip a tiny corner off. Once the dip comes out of the oven, let it cool for 2 minutes. Pipe concentric circles of sour cream starting from the center, spacing them about 1 inch apart. Then, using a toothpick or knife, drag lines from the center outward through all the circles to create a web pattern. Wipe the toothpick clean between each drag.
  7. Garnish with a plastic spider or olive spider if desired. Serve immediately with tortilla chips.

Notes

For best results, use full-fat cream cheese and sour cream to ensure the dip holds its shape and the web design stays crisp. You can assemble the dip (minus the sour cream web) up to 24 hours ahead and refrigerate; add 5 minutes to the baking time. For a vegan version, use dairy-free cream cheese, sour cream, and shredded cheese.
