  • 1 cup (90 g) rolled oats (old-fashioned preferred)
  • ⅓ cup (80 ml) honey (can substitute with maple syrup)
  • ½ teaspoon (2.5 ml) baking soda
  • ½ teaspoon (2.5 ml) sea salt flakes (for sprinkling on top)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the peanut butter and honey in a mixing bowl until smooth and well combined. If peanut butter is stiff, warm slightly in the microwave for about 15 seconds.
  3. Add the rolled oats and baking soda to the mixture. Stir gently until oats are fully coated and baking soda is evenly distributed.
  4. Scoop the dough onto the prepared baking sheet using a tablespoon or small cookie scoop, spacing about 2 inches apart. Flatten each cookie slightly to about ½ inch (1.25 cm) thickness.
  5. Sprinkle sea salt flakes on top of each cookie.
  6. Bake for 10-12 minutes until edges start to turn golden but centers remain soft.
  7. Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Use room temperature peanut butter and honey for easier mixing. Do not overbake to keep cookies chewy. Flatten cookies before baking for best texture.
