This crockpot lasagna soup with Italian sausage has all the rich, cheesy, saucy goodness of lasagna but happens in a slow cooker while you go about your day. It’s the recipe that makes you look like you planned ahead when really, you just threw things in a pot and walked away.

Ingredients

  • 1 pound Italian sausage (mild or hot)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth (low-sodium)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 8 lasagna noodles, broken into 2-inch pieces
  • 1 cup ricotta cheese (full-fat or part-skim)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Brown the sausage: Heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook, breaking it up, until browned and cooked through (6-8 minutes). Transfer to slow cooker with a slotted spoon.
  2. Cook the aromatics: In the same skillet, add diced onion and cook 3-4 minutes until softened. Add minced garlic and cook 30 seconds until fragrant. Stir in tomato paste and cook 1 minute until caramelized.
  3. Deglaze the pan: Pour about ½ cup chicken broth into the skillet and scrape up browned bits. Pour everything into the slow cooker with the sausage.
  4. Add liquids and seasonings: Pour in remaining chicken broth and crushed tomatoes. Add oregano, basil, red pepper flakes (if using), salt, and pepper. Stir to combine.
  5. Cook on low or high: Cover and cook on LOW for 5-6 hours or on HIGH for 3-4 hours.
  6. Add the noodles: About 30 minutes before serving, stir in broken lasagna noodles. Submerge in liquid. Cover and cook on HIGH for 20-30 minutes until tender (al dente).
  7. Prepare cheese mixture: Mix ricotta, mozzarella, and Parmesan in a small bowl. Add black pepper and fresh basil if desired.
  8. Serve: Ladle soup into bowls and top each with a generous spoonful of cheese mixture. Garnish with fresh basil or parsley.

Notes

For leftovers, store noodles separately from soup base to prevent mushiness. The soup base freezes well for up to 3 months (without noodles). If using gluten-free noodles, check at 15 minutes. For a vegetarian version, swap sausage for plant-based sausage or mushrooms.
