A quick and easy patriotic dessert featuring crispy Rice Krispie bars topped with colorful, festive frosting perfect for summer celebrations.

  • 6 cups Rice Krispies cereal (about 180g)
  • 4 cups mini marshmallows (about 240g)
  • 3 tablespoons unsalted butter (about 42g), plus extra for greasing the pan
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar (about 240g), sifted
  • 3–4 tablespoons milk (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • Red and blue gel food coloring
  • Optional: edible star sprinkles for decoration

Instructions

  1. Lightly butter a 9×13 inch (23×33 cm) baking pan and line it with parchment paper, leaving some overhang for easy removal.
  2. In a large saucepan over low heat, melt 3 tablespoons unsalted butter. Add 4 cups mini marshmallows and stir constantly until fully melted and smooth. Remove from heat and stir in 1 teaspoon vanilla extract.
  3. Immediately add 6 cups Rice Krispies cereal to the melted marshmallow mixture. Stir gently but thoroughly to coat all cereal evenly.
  4. Transfer the mixture into the prepared pan. Using a buttered spatula or wax paper, press firmly and evenly into the pan to create a uniform layer about 1-inch thick. Allow to cool completely at room temperature for about 30 minutes.
  5. While the bars cool, prepare the frosting. In a mixing bowl, whisk together 2 cups powdered sugar, 3 tablespoons milk, and 1 teaspoon vanilla extract until smooth. Divide the frosting evenly into three bowls. Color one bowl red, one blue, and leave one white (or plain).
  6. Once the bars are completely cooled, remove them from the pan using the parchment paper overhang. Spread the white frosting evenly over the entire surface as the base layer.
  7. Use the red frosting to pipe or spread horizontal stripes across the top half of the bar, leaving gaps for the white frosting to peek through. Spread the blue frosting to form the canton (the blue square) in the top left corner. Sprinkle edible star decorations on the blue section while the frosting is wet if desired.
  8. Allow the frosting to set at room temperature or in the fridge for about 20 minutes before slicing to prevent smudging.
  9. Slice the bars into rectangles that showcase the flag pattern. Serve fresh or store covered for up to 3 days.

Notes

Use gel food coloring to keep frosting thick and vibrant. Press bars gently to keep them light and crispy. Cool bars completely before frosting to prevent melting. Adjust frosting consistency with powdered sugar or milk as needed. Clean utensils between colors to keep frosting colors distinct.
