These crispy garlic Parmesan roasted rainbow carrots are a quick and easy side dish that transforms humble carrots into a show-stopping potluck favorite. With a golden, crispy Parmesan crust and tender, sweet carrots, this recipe is perfect for any occasion.

  • 1 ½ pounds rainbow carrots, peeled and cut on a diagonal into 2-inch pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup freshly grated Parmesan cheese (preferably Parmigiano-Reggiano)
  • 2 tablespoons panko breadcrumbs
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Fresh lemon wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel the rainbow carrots and cut them on a diagonal into pieces about 2 inches long. Try to make them roughly the same size so they cook evenly. If some carrots are much thicker than others, cut the thick ones in half lengthwise.
  3. In a large mixing bowl, combine the carrot pieces with olive oil, minced garlic, salt, pepper, and red pepper flakes if using. Toss everything together until every piece is well coated.
  4. Spread the carrots in a single layer on a parchment-lined large baking sheet, leaving about an inch between pieces.
  5. Roast for 20 minutes on the middle rack, until the carrots are starting to brown on the edges and getting tender.
  6. In a small bowl, combine the grated Parmesan and panko breadcrumbs. Remove the carrots from the oven and sprinkle this mixture evenly over them. Do not stir.
  7. Return the pan to the oven and roast for another 8-10 minutes, until the Parmesan is golden brown and crispy. Watch closely in the last few minutes to prevent burning.
  8. Remove from the oven and let rest for 2 minutes. Sprinkle with fresh parsley and serve with lemon wedges.

Notes

For extra crispy bits, add a little extra Parmesan that falls off the carrots onto the pan. Fresh garlic is key—jarred garlic can turn bitter. Watch the last few minutes of roasting as Parmesan can burn quickly. Let carrots rest for 2 minutes after roasting to help the cheese set up.
