Crispy Buffalo Cauliflower Bites with Easy Blue Cheese Ranch

Oven-baked cauliflower florets with a crispy cornstarch coating, tossed in tangy buffalo sauce and served with a creamy blue cheese ranch. A healthier, crowd-pleasing appetizer ready in 35 minutes.

  • 1 large head of cauliflower, cut into bite-sized florets (about 45 cups)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2/3 cup water or buttermilk
  • 1/2 cup hot sauce (preferably Frank’s RedHot)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup buttermilk
  • 1/3 cup crumbled blue cheese, plus extra for garnish
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 1/2 teaspoon garlic powder (for ranch)
  • 1/4 teaspoon onion powder (for ranch)
  • Salt and black pepper to taste
  • Fresh celery sticks for serving
  • Fresh chives or parsley for garnish

Instructions

  1. Preheat oven to 425Β°F (220Β°C). Line a large baking sheet with parchment paper and place a cooling rack on top if available.
  2. Wash and dry cauliflower thoroughly. Cut into bite-sized florets (about 4-5 cups). Pat dry with a clean towel.
  3. In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly pour in water or buttermilk while whisking until smooth batter forms.
  4. Add cauliflower florets to batter and toss gently until evenly coated. Let sit for 2 minutes.
  5. Using hands or tongs, lift coated florets, letting excess batter drip off, and place on prepared baking sheet, leaving space between each piece.
  6. Bake for 20 minutes. Flip each piece using tongs, then bake for another 10-15 minutes until deeply golden and crispy.
  7. While cauliflower bakes, melt butter in a small saucepan over low heat. Whisk in hot sauce, honey, and Worcestershire sauce. Keep warm on lowest setting.
  8. Transfer baked cauliflower to a large bowl. Pour warm buffalo sauce over top and toss gently with tongs until coated.
  9. Return sauced cauliflower to baking sheet and bake for another 5-7 minutes to set the sauce.
  10. In a small bowl, stir together sour cream, mayonnaise, buttermilk, blue cheese crumbles, chives, dill, garlic powder, and onion powder. Season with salt and pepper to taste. Refrigerate until ready to serve.
  11. Transfer cauliflower to a serving platter. Drizzle with blue cheese ranch, sprinkle with fresh chives and extra blue cheese crumbles. Serve with celery sticks immediately.

Notes

For extra crispiness, use a cooling rack on the baking sheet. Do not skip drying the cauliflower or the cornstarch. For a gluten-free version, use a 1:1 gluten-free baking blend. Leftovers can be stored in the refrigerator for up to 3 days; reheat in an air fryer or oven to restore crispiness.
