Crispy Balsamic Glazed Brussels Sprouts with Bacon Bits

A quick and easy side dish featuring crispy roasted Brussels sprouts tossed in a sweet and tangy balsamic glaze with smoky bacon bits. Perfect for weeknight dinners or special occasions.

  • 1 pound fresh Brussels sprouts, trimmed and halved
  • 4 slices bacon, chopped into small bits
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar (aged or good quality)
  • 1 teaspoon honey (or maple syrup as a substitute)
  • 2 cloves garlic, minced
  • Salt and freshly cracked black pepper, to taste
  • Optional: red pepper flakes for heat
  • Optional: toasted pine nuts for extra crunch

Instructions

  1. Preheat your oven to 400Β°F (200Β°C).
  2. Trim off the stem ends and remove any yellow or loose outer leaves from the Brussels sprouts. Cut each sprout in half lengthwise.
  3. Toss the sprouts in a mixing bowl with 2 tablespoons of olive oil, salt, and pepper until evenly coated.
  4. Spread the sprouts on a baking sheet in a single layer, cut side down.
  5. Roast for 20-25 minutes, flipping halfway through, until edges are golden and crispy.
  6. While the sprouts roast, cook the chopped bacon bits in a large skillet over medium heat for 6-8 minutes until crispy. Remove bacon with a slotted spoon and drain on paper towels, reserving about 1 tablespoon of bacon fat in the pan.
  7. Add minced garlic to the bacon fat and sautΓ© for about 30 seconds until fragrant.
  8. Stir in balsamic vinegar and honey, simmer gently for 2-3 minutes until the glaze thickens slightly.
  9. Add the roasted Brussels sprouts and bacon bits to the skillet, tossing well to coat evenly with the glaze.
  10. Season with additional salt and pepper if needed, then transfer to a serving dish and serve immediately.

Notes

Flip the Brussels sprouts halfway through roasting to ensure even crispiness and avoid burning. Save some bacon fat for the glaze to add smoky depth. Reheat leftovers in a skillet to maintain crispiness instead of microwaving.
