These crispy air fryer garlic Parmesan fries are a quick and easy snack with a punchy garlic-Parmesan flavor, crispy outside and tender inside, perfect for snack time or as a side.

  • 3 medium russet potatoes (about 1.5 pounds / 680 grams), peeled or unpeeled
  • 1 teaspoon garlic powder
  • Β½ cup (about 50 grams) grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • Β½ teaspoon freshly ground black pepper (optional)
  • 1 tablespoon dried parsley (optional)

Instructions

  1. Wash and peel the russet potatoes if desired. Cut into evenly sized sticks about ΒΌ to Β½ inch thick.
  2. Place cut potatoes in a large bowl of cold water and soak for at least 30 minutes or up to 2 hours to remove excess starch.
  3. Drain and pat potatoes completely dry with paper towels.
  4. In a mixing bowl, toss dried potatoes with olive oil, garlic powder, black pepper, and salt until well coated.
  5. Preheat air fryer to 400Β°F (200Β°C) for about 3 minutes.
  6. Place fries in a single layer in the air fryer basket (cook in batches if needed). Cook for 15 minutes, shaking or flipping halfway through.
  7. Transfer hot fries to a large bowl. Sprinkle grated Parmesan and dried parsley over fries and toss gently to coat while hot.
  8. Serve immediately for best crunch. Optionally add extra salt or garlic powder to taste.

Notes

Soaking potatoes removes starch for crispiness. Dry fries thoroughly before cooking. Cook in a single layer and shake basket halfway through. Use freshly grated Parmesan for best melting and flavor. Adjust salt if using garlic salt instead of garlic powder. For dairy-free, substitute Parmesan with nutritional yeast and use plant-based oil.
