Creamy Slow Cooker Beer Cheese Queso – Easy Tailgate Dip

This creamy slow cooker beer cheese queso is the ultimate tailgate dip. It’s rich, cheesy, and has a subtle beer flavor that pairs perfectly with salty tortilla chips, and it’s incredibly easy to make with just 10 minutes of prep.

  • 16 oz sharp cheddar cheese, freshly shredded
  • 8 oz cream cheese, softened and cut into cubes
  • 1 cup beer, preferably a lager or pale ale
  • 1/2 cup whole milk or half-and-half
  • 1 can (10 oz) diced tomatoes and green chilies, drained
  • 1 jalapeño, seeded and finely diced
  • 1/2 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Tortilla chips, for serving

Instructions

  1. Shred the cheddar cheese using a box grater or food processor. Set aside.
  2. Dice the onion and jalapeño finely. Mince the garlic cloves. Drain the can of diced tomatoes and green chilies.
  3. In a large bowl, toss the shredded cheddar with the cornstarch until every strand is lightly coated.
  4. Layer the ingredients in the slow cooker: start with the cream cheese cubes at the bottom, then add the shredded cheddar mixture, diced onion, jalapeño, minced garlic, drained tomatoes and green chilies, Dijon mustard, smoked paprika, and cayenne pepper if using. Do not stir yet.
  5. Slowly pour the beer and milk over the top. Give everything a gentle stir to combine.
  6. Cover and cook on low for 1.5 to 2 hours. After about an hour, stir with a whisk to help everything melt together.
  7. After 2 hours, whisk the queso vigorously until completely smooth. If too thick, add a splash more milk or beer; if too thin, cook uncovered for 15-20 minutes.
  8. Taste and adjust seasoning with salt and black pepper.
  9. Switch the slow cooker to ‘warm’ setting for serving. Stir occasionally to prevent a skin from forming.

Notes

Shred your own cheese for the smoothest texture. Use a light lager or mild pale ale; avoid IPAs and stouts. Drain the Rotel thoroughly to prevent a soupy queso. The queso will thicken as it cools slightly.
