This creamy overnight peanut butter protein oats recipe started as a kitchen accident, but it has become my most reliable breakfast. It’s proof that sometimes the best recipes come from moments of frustration and improvisation.

  • 1 cup (240ml) milk of choice
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • Pinch of salt (about 1/8 teaspoon)
  • Optional toppings: sliced banana, dark chocolate chips, chopped peanuts, extra peanut butter, fresh berries

Instructions

  1. Combine the dry ingredients: In your jar or container, add 1 cup of rolled oats, 1 tablespoon of chia seeds, 1 scoop of vanilla protein powder, and a pinch of salt. Give it a quick stir with a fork to break up any protein powder clumps.
  2. Add the wet ingredients: Pour in 1 cup of milk, 2 tablespoons of creamy peanut butter, and 1 tablespoon of maple syrup or honey. Don’t worry if the peanut butter doesn’t mix in right away—it will soften overnight.
  3. Stir thoroughly: Use a whisk or fork to mix everything together until no dry streaks remain. Pay special attention to the bottom corners of the jar where ingredients like to hide. The mixture should look uniform and slightly thick at this point.
  4. Seal and refrigerate: Put the lid on tightly and place the jar in the refrigerator. Leave it for at least 6 hours, but overnight (8-12 hours) is ideal. The chia seeds need time to swell and create that creamy texture.
  5. Check consistency in the morning: Take the jar out and give it a stir. The oats should be soft and the mixture should be thick but spoonable. If it looks too thick, add a splash of milk and stir. If it looks too thin, let it sit for another hour—the chia seeds will continue absorbing.
  6. Add toppings and serve: Transfer to a bowl or eat straight from the jar. Top with sliced banana, a drizzle of extra peanut butter, a sprinkle of chopped peanuts, or dark chocolate chips. Serve cold or let it sit at room temperature for 10 minutes if you prefer less chill.

Notes

The protein powder matters: whey protein creates a thicker, creamier texture; plant-based proteins can be slightly grainy. Don’t skip the chia seeds—they are essential for the pudding-like consistency. Stir twice if you can: once before bed and again after 30 minutes in the fridge to prevent clumps. The colder your fridge, the longer the oats need to soften. Batch prep 4-5 jars on Sunday for grab-and-go breakfasts all week. These oats actually get better after a day or two in the fridge.
