  • 1 can (28 ounces / 800 grams) crushed tomatoes
  • 3 cups (720 ml) vegetable broth, low sodium
  • ½ cup (120 ml) heavy cream
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • Salt and black pepper, to taste
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat for about 3-4 minutes until shimmering but not smoking.
  2. Add the minced garlic and chopped onion. Sauté for 3-4 minutes until softened and fragrant, stirring occasionally. Lower heat if garlic browns too fast.
  3. Pour in the crushed tomatoes and vegetable broth. Stir to combine, scraping any bits from the bottom. Bring to a gentle simmer for about 5 minutes.
  4. Add the tortellini straight into the sauce. Stir gently to submerge evenly. Cover with a lid and cook for 5 minutes.
  5. Remove the lid and stir carefully. Check tortellini tenderness; if needed, cover and cook another 2-3 minutes until sauce thickens.
  6. Lower heat and stir in the heavy cream and Parmesan cheese until cheese melts smoothly, about 2 minutes. Add salt, pepper, and red pepper flakes.
  7. Turn off heat and fold in fresh chopped basil. The residual heat will release aroma without wilting the basil too much.
  8. Serve immediately, spooning generous portions into bowls. Garnish with extra Parmesan or basil leaves if desired.

If sauce gets too thick, add a splash of broth or water to loosen. Stir gently but consistently to prevent tortellini from sticking or tearing.
