Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 30 minutes before starting. If forgotten, microwave in 10-second bursts until just softened.
  2. Shred the cheddar cheese: Grate the block of sharp cheddar on the large holes of a box grater. Set aside.
  3. Combine the base: In a medium saucepan over low heat, add the softened cream cheese and 1/4 cup of the beer. Stir constantly until the cream cheese is fully melted and smooth, about 2-3 minutes.
  4. Add the beer: Slowly pour in the remaining 1/4 cup of beer while stirring. Continue stirring until the mixture is creamy.
  5. Incorporate the mustard and seasonings: Add the Dijon mustard, Worcestershire sauce, garlic powder, onion powder, and cayenne (if using). Stir until well combined.
  6. Add the cheese gradually: Remove the saucepan from heat. Add the shredded cheddar cheese one handful at a time, stirring each addition until fully melted before adding the next.
