A creamy, savory breakfast casserole combining the flavors of an everything bagel with cream cheese and cheddar, perfect for brunch or potlucks. Easy to prepare and a crowd-pleaser with a crispy everything bagel seasoning topping.

Ingredients

Scale
  • 4 large everything bagels, cut into 1-inch cubes (stale or day-old preferred)
  • 8 ounces cream cheese, softened
  • 6 large eggs, room temperature
  • 2 cups milk (whole milk preferred, 2% works fine)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons everything bagel seasoning
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons butter, melted (for greasing the baking dish)
  • Optional add-ins: diced green onions or chives, cooked bacon or sausage

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with melted butter.
  2. Cut the everything bagels into roughly 1-inch cubes.
  3. In a large bowl, whisk together 6 large eggs and 2 cups of milk until fully combined and slightly frothy, about 2 minutes.
  4. Add the softened cream cheese in spoonfuls, whisking quickly to break it up and create a creamy custard.
  5. Stir in 1 teaspoon salt and ½ teaspoon freshly ground black pepper.
  6. Gently fold in the bagel cubes and 1 cup shredded cheddar cheese into the custard mixture. Add optional diced green onions or cooked bacon if desired.
  7. Pour the mixture into the greased baking dish, spreading evenly.
  8. Sprinkle 2 tablespoons of everything bagel seasoning generously over the top.
  9. Bake uncovered for 40-45 minutes, or until the casserole is puffed, golden brown on top, and a toothpick inserted in the center comes out clean.
  10. Let the casserole rest for about 10 minutes before serving.

Notes

Use day-old bagels for best texture to soak up custard without becoming soggy. Bring eggs and milk to room temperature for smooth custard. Soften cream cheese well to avoid lumps. If top browns too quickly, cover loosely with foil halfway through baking. For dairy-free, substitute cream cheese and milk with plant-based alternatives. Gluten-free bagels can be used to make the recipe gluten-free.
