  • 8 slices thick-cut bacon
  • 8 oz (225g) cream cheese, softened
  • 1 packet (about 2 tablespoons) ranch seasoning mix
  • 1 cup (100g) shredded cheddar cheese
  • Optional: fresh chives or parsley for garnish
  • Optional: black pepper to taste

Instructions

  1. Cook the bacon: Place bacon slices in a large skillet over medium heat. Cook for about 6–8 minutes, turning occasionally, until crispy. Remove bacon and set aside on paper towels to drain. Leave about 1 tablespoon of bacon fat in the pan.
  2. Prepare the chicken: Season the chicken breasts lightly with salt and pepper. Add them to the skillet and cook over medium heat for about 6 minutes on each side (12 minutes total), or until the internal temperature reaches 165Β°F (75Β°C) and the chicken has a golden-brown crust. Reduce heat if pan gets too hot.
  3. Mix the cream cheese and ranch: While chicken cooks, soften the cream cheese in a bowl. Stir in the ranch seasoning until well combined. Add a splash of milk or cream if mixture is too stiff.
  4. Add the creamy ranch mixture: Reduce heat to low and spoon the ranch cream cheese mixture evenly over each chicken breast. Sprinkle shredded cheddar cheese on top.
  5. Cover and melt: Cover the skillet with a lid or foil and cook for 3–5 minutes until the cheese melts and the sauce bubbles gently.
  6. Crumble the bacon: While cheese melts, crumble the cooked bacon into bite-sized pieces.
  7. Finish and serve: Remove the lid, sprinkle crumbled bacon over the cheesy chicken. Add freshly chopped chives or parsley if using. Serve hot.

Do not overcook the chicken; use a meat thermometer for best results. Crisp bacon is essential for texture and flavor. Soften cream cheese before mixing to avoid lumps. Reserve bacon fat in the pan for added smoky flavor. Cover skillet while melting cheese to trap steam and prevent drying out. Add a splash of chicken broth or water if sauce is too thick. Oven-baked bacon can be used to save time. Pre-cooked bacon is a time-saving alternative but freshly cooked tastes best.
