Instructions

  1. Make the Cookie Dough (15 minutes): In a large bowl, cream together the softened butter (1 cup / 225 g) and granulated sugar (¾ cup / 150 g) using an electric mixer until light and fluffy, about 3-4 minutes. Add the egg (1 large) and vanilla extract (1 ½ tsp), beating until just combined.
  2. Combine Dry Ingredients (5 minutes): In a separate bowl, whisk together the all-purpose flour (2 ½ cups / 315 g), baking powder (1 tsp), and salt (¼ tsp). Gradually add the dry ingredients to the wet, mixing on low speed until the dough forms. If it feels too sticky, chill for 10 minutes.
  3. Roll Out Dough (10 minutes): Lightly flour your work surface and roll the dough to about ¼ inch (6 mm) thickness. Use your alphabet cookie cutters to cut out shapes, transferring them carefully to a baking sheet lined with parchment paper. Re-roll scraps once or twice to maximize yield.
