A quick and easy triple berry crisp with a crunchy oat crumble topping, perfect for cozy evenings and last-minute sweet cravings. This dessert balances sweet-tart berries with a buttery, crisp oat topping.

Ingredients

Scale
  • 3 cups mixed berries (fresh or frozen; blueberries, raspberries, blackberries)
  • 1/3 cup granulated sugar (adjust based on berry sweetness)
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (can substitute almond flour for gluten-free)
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup chopped nuts (walnuts or pecans; optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. In a medium bowl, combine 3 cups of mixed berries with 1/3 cup granulated sugar, 1 tablespoon cornstarch, 1 teaspoon fresh lemon juice, 1/2 teaspoon vanilla extract, and 1/4 teaspoon ground cinnamon. Gently toss until berries are evenly coated.
  3. Transfer the berry mixture to a 9-inch baking dish and spread evenly.
  4. In a separate bowl, mix 1 cup rolled oats, 1/2 cup all-purpose flour, 1/2 cup light brown sugar, 1/4 teaspoon salt, and 1/2 teaspoon ground cinnamon.
  5. Pour in 6 tablespoons melted unsalted butter and stir until the mixture clumps together. Fold in 1/4 cup chopped nuts if using.
  6. Evenly sprinkle the crumble topping over the berry filling without pressing down.
  7. Bake for 35–40 minutes until the topping is golden brown and the filling bubbles around the edges.
  8. Remove from oven and let cool for at least 15 minutes to allow the filling to set.
  9. Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

If berries are very juicy, add up to 2 tablespoons cornstarch to prevent watery filling. Tent topping with foil if browning too fast. Use old-fashioned rolled oats for best texture. Butter can be substituted with coconut oil for dairy-free version. Nuts are optional but add extra texture. Resting the crisp after baking helps thicken the filling.
