  • 1/4 cup heavy cream or heavy whipping cream
  • 1 tablespoon pumpkin butter (or 1 tablespoon pumpkin puree + 1/2 teaspoon pumpkin pie spice)
  • 1 tablespoon maple syrup (or brown sugar, honey)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice, plus extra for garnish
  • Pinch of salt
  • 1 cup strong brewed coffee or cold brew
  • Ice cubes, as needed
  • Optional garnish: cinnamon or star anise pod

Instructions

  1. Brew your coffee or pour cold brew over a glass full of ice. Set aside.
  2. In a pint-sized mason jar, combine heavy cream, pumpkin butter, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt.
  3. Screw the lid on tightly and shake vigorously for 45 to 60 seconds until the mixture is thick and pillowy and holds a soft peak.
  4. Check the consistency; if still liquid, shake another 15-20 seconds.
  5. Gently dollop the cold foam on top of the iced coffee using a spoon.
  6. Sprinkle extra pumpkin pie spice or cinnamon on top. Garnish with a star anise pod if desired. Serve immediately with a straw or spoon.

Notes

Use cold ingredients for best foam. Don’t over-shake or you’ll make butter. Adjust sweetness to taste. For dairy-free, use full-fat coconut cream. Foam can be made up to an hour ahead and stored in the fridge.
