  • 16 oz (2 cups) store-bought salsa (medium or mild)
  • 4 cups low-sodium chicken broth
  • 1 cup frozen corn
  • 1 packet (1 oz) mild taco seasoning
  • Tortilla chips (for serving)
  • Shredded cheese (for serving)
  • Sour cream or Greek yogurt (for serving)
  • Fresh cilantro (for serving)
  • Lime wedges (for serving)
  • Diced avocado (for serving)

Instructions

  1. Place the chicken breasts in a single layer at the bottom of the slow cooker.
  2. Pour the entire jar of salsa over the chicken.
  3. Sprinkle the taco seasoning evenly over the salsa and chicken.
  4. Slowly pour the chicken broth around the edges of the pot, avoiding the seasoning on top.
  5. Add the frozen corn on top without stirring.
  6. Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fall-apart tender.
  7. Shred the chicken using two forks, either in the pot or on a cutting board, then return it to the slow cooker and stir.
  8. Let the soup rest on warm for 10 to 15 minutes to meld flavors and thicken slightly.
  9. Taste and adjust seasoning with salt, hot sauce, or jalapeΓ±o as desired.

Notes

For a thicker soup, blend 1 cup of the soup (minus chicken) and stir back in. For meal prep, shred chicken and store separately from broth to avoid mushiness. Toasting tortilla strips adds extra crunch.
