  • ¼ cup unsalted butter (56g), cold and cut into small cubes
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • ¼ cup granulated sugar (50g)
  • 2 tablespoons unsalted butter (28g), cut into pieces
  • 2 tablespoons heavy cream (30ml)
  • ½ teaspoon flaky sea salt (like Maldon) plus more for finishing

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Make the salted caramel sauce: In a small saucepan over medium heat, add the ¼ cup granulated sugar. Cook without stirring for about 3-4 minutes, just swirling the pan occasionally, until the sugar melts into a deep amber color. Remove from heat and immediately whisk in the 2 tablespoons butter pieces. Keep whisking until the butter is fully incorporated. Slowly drizzle in the heavy cream while whisking constantly. Stir in the flaky sea salt. Set aside to cool for 5 minutes.
  3. Prepare the apples: Peel, core, and slice your apples into ¼-inch thick pieces. In a medium bowl, toss the apple slices with the granulated sugar, 1 tablespoon flour, cinnamon, nutmeg, salt, and lemon juice. Let them sit for 5 minutes.
  4. Make the oat topping: In a small bowl, combine the rolled oats, ⅓ cup flour, brown sugar, ¼ teaspoon cinnamon, and a pinch of salt. Add the cold butter cubes. Using your fingertips or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. Refrigerate while you assemble the crisp.
  5. Assemble the crisps: Divide the apple mixture evenly between two 6-inch ramekins or a small baking dish. Drizzle about half of the salted caramel sauce over the apples. Gently stir the caramel into the apples. Sprinkle the oat topping evenly over the apples, pressing down lightly.
  6. Bake: Place the ramekins on a baking sheet. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbling around the edges. If the topping is browning too quickly around the 20-minute mark, tent loosely with foil.
  7. Cool and finish: Let the crisps cool on a wire rack for at least 10 minutes. Drizzle the reserved salted caramel sauce over the top and sprinkle with a pinch of flaky sea salt. Serve warm.
