  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 1 cup (240g) pumpkin puree (not pumpkin pie filling)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 4 oz (113g) cream cheese, softened
  • 2 tablespoons (28g) unsalted butter, softened
  • 3 tablespoons pure maple syrup
  • 1 cup (120g) powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in pumpkin puree, egg, and vanilla extract until just combined.
  5. Gradually add dry ingredients to wet ingredients, mixing on low until just combined. Do not overmix.
  6. Chill dough for 20 minutes.
  7. Scoop dough into 2-tablespoon balls and place 2 inches apart on prepared baking sheets.
  8. Bake for 12-14 minutes, until edges are set and tops look dry.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. For icing: Beat cream cheese and butter until smooth. Add maple syrup and vanilla, then gradually beat in sifted powdered sugar and a pinch of salt until smooth.
  11. Spread icing on completely cooled cookies. Let set for 15 minutes before serving.

Notes

Chill the dough for at least 20 minutes to prevent spreading. Use room temperature cream cheese for smooth icing. For softer cookies, bake 12 minutes; for firmer, 14 minutes. Store iced cookies in the refrigerator for up to 5 days.
