A simple, soul-warming one-pan chicken and stuffing bake perfect for Friendsgiving. Juicy chicken thighs rest on a bed of herbed stuffing, creating a crispy top and tender, savory layer underneath.

  • 6 bone-in, skin-on chicken thighs (about 2 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box (12 ounces) seasoned stuffing mix
  • 1 1/2 cups low-sodium chicken broth
  • 1/2 cup unsalted butter, melted
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 celery stalks, diced (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh thyme sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Pat chicken thighs dry with paper towels. Season both sides with garlic powder, onion powder, dried thyme, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Place chicken thighs skin-side down and cook undisturbed for 5-6 minutes until golden brown. Flip and cook for 2 more minutes. Transfer chicken to a plate and set aside.
  3. In the same skillet, add diced onion and celery. Cook over medium heat for 4-5 minutes until softened. Add minced garlic and cook for 30 seconds more, scraping up browned bits.
  4. In a large mixing bowl, combine stuffing mix, cooked onion and celery mixture, melted butter, and chicken broth. Stir until bread cubes are evenly moistened (moist but not soupy).
  5. Transfer stuffing mixture to a 9×13-inch baking dish and spread into an even layer. Nestle seared chicken thighs into the stuffing, skin-side up.
  6. Cover dish tightly with foil and bake for 30 minutes. Remove foil and continue baking for 15-20 minutes, until stuffing is golden brown and chicken reaches an internal temperature of 165Β°F (74Β°C). Optionally broil for 2-3 minutes for extra crispy skin.
  7. Let dish rest for 5-10 minutes before serving. Sprinkle with fresh parsley and Parmesan cheese if using, and garnish with fresh thyme sprigs.
