These Cozy Mummy Meatball Sliders are a fun and delicious twist on classic meatball sliders, perfect for potlucks and Halloween parties. Juicy meatballs are wrapped in pizza dough strips to look like little mummies, then baked with a tangy sauce and gooey mozzarella cheese.

  • 1 pound ground beef (80/20 blend)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup regular breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup milk (whole milk preferred)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup finely chopped fresh parsley (optional)
  • 1 cup marinara sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon brown sugar
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (13.8 oz) refrigerated pizza dough
  • 8 ounces fresh mozzarella cheese, cut into 16 small cubes
  • 16 black olive slices
  • 1 tablespoon melted butter
  • 1/2 teaspoon garlic powder
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine the ground beef, panko breadcrumbs, regular breadcrumbs, beaten egg, milk, grated Parmesan, minced garlic, oregano, salt, pepper, and parsley if using. Mix gently with your hands until just combined. Roll the mixture into 16 evenly sized meatballs, about 1.5 inches in diameter.
  3. Place the meatballs on the prepared baking sheet, spaced about an inch apart. Bake for 12 minutes (par-bake). They will not be fully cooked through.
  4. In a small saucepan over medium heat, combine the marinara sauce, balsamic vinegar, brown sugar, and red pepper flakes if using. Stir and let simmer gently for about 5 minutes, then remove from heat.
  5. Open the can of pizza dough and unroll it onto a lightly floured surface. Using a sharp knife or pizza cutter, cut the dough into 16 long strips, each about 1/2 inch wide.
  6. Take one par-baked meatball and dip it into the sauce, coating it lightly. Place the sauced meatball back on the baking sheet. Wrap two strips of pizza dough around the meatball, crossing them in the middle to create the mummy look. Leave a small gap in the front for the eyes. Press the dough gently into the meatball so it sticks. Repeat with the remaining meatballs.
  7. Press two olive slices into the gap in the dough for the eyes. Then, tuck a small cube of fresh mozzarella into the dough near the top of the meatball.
  8. In a small bowl, mix the melted butter with the garlic powder. Brush this mixture over the dough strips. Sprinkle sesame seeds on top if using.
  9. Return the baking sheet to the oven and bake for 12-15 minutes, until the dough is golden brown and the cheese is melted and bubbly.
  10. Let the sliders cool on the baking sheet for about 5 minutes before serving. Serve with the remaining sauce on the side for dipping.

Notes

When wrapping the dough, try not to stretch it too thinβ€”it can tear during baking. If a strip does tear, just press it back together; it’ll fuse as it bakes. If making ahead, assemble the sliders (without baking) and keep in the refrigerator for up to 24 hours; add 2-3 minutes to the bake time. For freezing, freeze assembled unbaked sliders for up to 2 months; bake from frozen, adding 5-7 minutes.
