Cozy Lentil Power Bowl with Easy Creamy Tahini

A warm, hearty, and deeply comforting lentil power bowl with caramelized sweet potatoes and a creamy tahini dressing that comes together in under 40 minutes. Perfect for busy weeknights or meal prep.

  • 1 cup (200g) green lentils, rinsed and picked over
  • 2 medium sweet potatoes (about 500g), peeled and diced into 1-inch cubes
  • 3 cups (90g) fresh spinach
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 3 cups (720ml) vegetable broth
  • 3 tablespoons (45ml) olive oil, divided
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup (60g) tahini, well-stirred
  • 3 tablespoons (45ml) lemon juice, fresh
  • 1 tablespoon (15ml) maple syrup
  • 1 small clove garlic, minced or grated
  • 3–4 tablespoons (45-60ml) water
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the diced sweet potatoes with 2 tablespoons of olive oil, a pinch of salt, and black pepper. Spread in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until golden and tender.
  3. While sweet potatoes roast, rinse the lentils. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the rinsed lentils, vegetable broth, cumin, and smoked paprika. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until lentils are tender but hold their shape. Drain any excess liquid.
  5. In a small bowl, whisk together the tahini, lemon juice, maple syrup, minced garlic, and salt. Slowly whisk in water, one tablespoon at a time, until smooth and pourable.
  6. Once lentils are done, stir in the fresh spinach until wilted, about 1 minute.
  7. Divide the lentil-spinach mixture between two bowls. Top with roasted sweet potatoes and sliced red onion. Drizzle generously with tahini dressing.
  8. Add optional toppings like toasted pumpkin seeds, fresh parsley, crumbled feta, or pickled red onions. Serve warm.

Notes

For meal prep, store dressing separately and add just before eating to prevent sogginess. Lentils and sweet potatoes can be stored together. The dressing will thicken in the fridge; whisk in a teaspoon of water to loosen.
