  • 1/2 cup (120 ml) heavy cream or half-and-half (can substitute coconut cream for dairy-free)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon fresh thyme, chopped (or dried)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 ounces (340 grams) of egg noodles and cook according to package instructions, usually 6-8 minutes, until al dente. Drain and set aside, reserving 1/2 cup (120 ml) of the pasta water for later if needed.
  2. While noodles cook, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the bite-sized chicken pieces with salt and pepper. Add them to the pan in a single layer, cooking for 4-5 minutes per side until golden brown and cooked through. Remove chicken from the pan and set aside.
  3. In the same skillet, reduce heat to medium and melt 3 tablespoons of unsalted butter. Add 3 minced garlic cloves and sautΓ© for about 1 minute until fragrant but not browned.
  4. Sprinkle 2 tablespoons of all-purpose flour over the melted butter and garlic. Stir constantly for about 1-2 minutes to cook the raw flour taste out, creating a roux.
  5. Slowly whisk in 2 cups (480 ml) chicken broth, stirring to prevent lumps. Then pour in 1/2 cup (120 ml) of heavy cream or half-and-half. Keep stirring until the sauce thickens, about 3-5 minutes. If it gets too thick, add a splash of reserved pasta water for desired consistency.
  6. Add 1 teaspoon fresh thyme, salt, and pepper to taste. Stir in 1/4 cup grated Parmesan cheese, if using, until melted and incorporated.
  7. Return the cooked chicken to the skillet, then add the drained egg noodles. Toss everything gently to coat the noodles and chicken in the creamy sauce. Heat through for 1-2 minutes until everything is warm and well combined.
  8. Taste and adjust seasoning if needed. Remove from heat and serve immediately for the best texture and flavor.

Reserve pasta water to adjust sauce consistency. Pat chicken dry before cooking to get a nice crust. Stir constantly when making roux to avoid lumps.
