  • 6 cups stale bread, cubed (preferably sturdy white or country-style bread)
  • 1Β½ cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large eggs, room temperature
  • 2 cups whole milk or half-and-half
  • 3 tablespoons melted butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon fresh herbs (parsley or chives), optional

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease a 9×13 inch casserole dish with butter or non-stick spray.
  2. Cube the stale bread into roughly 1-inch pieces. Toss in a large bowl with 1 cup shredded cheddar and Β½ cup mozzarella cheese.
  3. In a separate bowl, whisk together the eggs, milk, melted butter, garlic powder, salt, and pepper until smooth.
  4. Pour the custard mixture over the bread and cheese, pressing gently to ensure all bread absorbs the liquid. Let sit for 10-15 minutes.
  5. Sprinkle the remaining Β½ cup cheddar and Β½ cup mozzarella evenly over the top.
  6. Bake uncovered for 35-40 minutes until puffed and golden brown, and a knife inserted in the center comes out mostly clean.
  7. Remove from oven and let rest for 5-10 minutes before serving.

Notes

Let the bread soak in the custard for at least 10 minutes for a creamy center. Use freshly shredded cheese for best melting. Tent with foil if top browns too quickly. Room temperature eggs blend better. Leftovers reheat best in the oven to keep crust crispy.
