  • 2 cups (480ml) beef broth
  • 1/2 cup (120g) French onion dip (refrigerated kind, like Dean’s or Heluva Good)
  • 2 medium yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup (100g) shredded Gruyère or Swiss cheese
  • 2 tablespoons (28g) unsalted butter
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste (about 1/2 tsp salt, 1/4 tsp pepper)
  • Fresh parsley for garnish (optional)

Instructions

  1. Sauté the onions: Melt butter in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, for 8-10 minutes until soft and golden brown. Add minced garlic in the last 30 seconds and cook until fragrant.
  2. Layer ingredients in crockpot: Spray crockpot with non-stick spray. Spread uncooked rice evenly on bottom. Place chicken thighs on top in a single layer. Season with salt, pepper, and dried thyme. Spoon sautéed onions and garlic over chicken.
  3. Make broth mixture: In a small bowl, whisk together beef broth and French onion dip until smooth. Pour over chicken and onions. Do not stir.
  4. Cook low and slow: Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is fork-tender and rice is tender and has absorbed most liquid. Check at halfway point; if dry, add 1/4 cup extra broth.
  5. Shred chicken: Remove chicken to a cutting board, shred with two forks, and return to crockpot. Stir gently to combine.
  6. Add cheese and melt: Sprinkle shredded cheese evenly over top. Cover and let sit for 5 minutes until melted and bubbly. Optionally, broil for 2-3 minutes for a browner top.
  7. Garnish and serve: Sprinkle fresh parsley on top. Serve hot straight from the crockpot.

Notes

Don’t skip sautéing the onions—it prevents bitterness. Layer rice on the bottom for even cooking. Check liquid halfway through; add extra broth if needed. Use a meat thermometer for chicken (165°F safe, 175°F for tenderness). Let rest 5-10 minutes before serving. Leftovers keep up to 4 days in the fridge; flavors improve overnight. Not recommended for freezing due to rice texture.
