Instructions

  1. Activate the yeast: In a mixing bowl, combine warm water (1 1/4 cups) with sugar or honey (1 tablespoon). Stir gently, then sprinkle the yeast (2 1/4 teaspoons) over the surface. Let it sit until foamy and bubbly, about 5 to 10 minutes.
  2. Make the dough: Add olive oil or melted butter (2 tablespoons), salt (1 teaspoon), and about 3 cups of flour to the yeast mixture. Stir until a sticky dough forms. Gradually add remaining flour until dough is soft but not too sticky.
  3. Knead the dough: Turn dough onto a floured surface and knead by hand for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with dough hook on medium speed.
  4. First rise: Lightly oil a clean bowl, place dough inside, cover with towel or plastic wrap, and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  5. Prepare the soup: In a medium saucepan, melt butter (1 tablespoon) over medium heat. Add garlic powder, pepper, and dried herbs, stirring until fragrant. Pour in canned soup and milk, whisking constantly until smooth and heated through. Avoid boiling.
  6. Shape the bread: Punch down risen dough, shape into loaf or boule, place in greased loaf pan or baking sheet, cover, and let rise again for 30-45 minutes until puffy.
  7. Bake the bread: Preheat oven to 375°F (190°C). Bake bread for 25-30 minutes until golden brown and hollow sounding when tapped. Internal temperature should be 190-200°F (88-93°C). Cool on rack before slicing.
