  • 4 cups (about 200g) mini marshmallows
  • 3 tablespoons (45g) unsalted butter, softened
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • A few drops red food coloring (optional)
  • Pretzel sticks for apple stems
  • Green candy melts or green icing for leaves

Instructions

  1. Lightly grease a 9×13-inch baking pan with butter or nonstick spray and line with parchment paper. Set aside.
  2. In a medium saucepan over low heat, melt 3 tablespoons unsalted butter completely.
  3. Add 4 cups mini marshmallows and stir constantly until smooth and melted, avoiding high heat to prevent scorching.
  4. Remove from heat and stir in 1/2 teaspoon cinnamon and 1 teaspoon vanilla extract. Add a few drops of red food coloring if desired and mix until evenly tinted.
  5. Pour in 6 cups Rice Krispies cereal all at once and quickly fold into the marshmallow mixture until fully coated.
  6. Transfer the mixture into the prepared pan and press evenly about 1 inch thick using a buttered spatula or greased hands. Let cool for 30 minutes to firm up.
  7. Once set but still slightly pliable, use an apple-shaped cookie cutter to cut out treats. Insert pretzel sticks at the top for stems.
  8. Melt green candy melts in the microwave in 20-second bursts until smooth. Use a toothpick or small spoon to add ‘leaves’ near the pretzel stems or pipe green icing. Let set until firm.
  9. Enjoy immediately or store in an airtight container at room temperature for up to 3 days.

Melt butter and marshmallows over low heat to avoid burning. Grease spatula and hands before pressing mixture to prevent sticking. Work quickly when mixing cereal to avoid crumbly treats.
