A warm, spiced cocktail made in the slow cooker with apple cider, spiced rum, and aromatic spices. Perfect for fall gatherings, this budget-friendly drink is simple to prepare and always a crowd-pleaser.

  • 8 cups (64 oz) apple cider
  • 1 ½ cups (12 oz) spiced rum
  • ¼ cup (50 g) packed brown sugar
  • 4 whole cinnamon sticks
  • 1 tablespoon whole cloves (about 15)
  • 2 whole star anise pods (optional)
  • 1 medium orange, sliced into rounds
  • 1 medium apple, sliced into thin rounds
  • 1 teaspoon vanilla extract
  • A tiny pinch of salt

Instructions

  1. Plug in your slow cooker and set it to low heat.
  2. Pour all 8 cups of apple cider into the slow cooker.
  3. Measure and pour 1 ½ cups of spiced rum into the cider. Stir briefly.
  4. Add ¼ cup packed brown sugar and stir until mostly dissolved.
  5. Drop in 4 cinnamon sticks, 1 tablespoon whole cloves, and 2 star anise pods (if using).
  6. Add 1 teaspoon vanilla extract and a tiny pinch of salt. Stir gently.
  7. Arrange orange and apple slices on top of the liquid.
  8. Cover and cook on low for 2 to 3 hours.
  9. After 2 hours, taste and adjust sweetness or spice as desired.
  10. Serve warm, ladling into mugs with a slice of fruit if possible. Stir gently before each serving.

Notes

For a non-alcoholic version, skip the rum and add an extra ½ cup of apple cider plus ½ teaspoon of rum extract. To make ahead, prepare the cocktail, refrigerate overnight, and reheat gently. Fish out whole cloves before serving to avoid biting into one. Double the batch without doubling the spices—use about 1.5 times the original amount.
