This slow cooker chili cheese dip is a quick and easy game-day favorite, made with ground beef, cream cheese, and plenty of melted cheddar. It’s creamy, cheesy, and perfect for parties.

  • 1 small yellow onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 can (15 ounces) chili with beans
  • 1 can (10 ounces) diced tomatoes with green chilies (undrained)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened and cubed
  • 2 cups shredded sharp cheddar cheese (about 8 ounces)
  • 1 cup shredded Monterey Jack cheese (about 4 ounces)
  • 1/4 cup chopped fresh cilantro (optional)
  • 2 green onions, sliced (optional)
  • Pickled jalapeΓ±os (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 5-7 minutes. Drain excess fat, leaving about 1 tablespoon.
  2. Add diced onion to the skillet and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the beef mixture. Stir and cook for 1 minute to toast the spices.
  4. Transfer the beef mixture to a slow cooker. Add the can of chili and diced tomatoes with green chilies (undrained). Stir to combine.
  5. Scatter cubed cream cheese over the top. Do not stir. Cover and cook on low for 30 minutes.
  6. Stir the mixture well. Cover and cook on low for another 30 minutes, stirring halfway through.
  7. Once cream cheese is fully incorporated and dip is hot and bubbly, sprinkle in shredded cheddar and Monterey Jack. Stir until completely melted, about 2-3 minutes.
  8. Switch slow cooker to warm. Garnish with cilantro and green onions if desired. Serve directly from the slow cooker with tortilla chips, pretzel bites, or sliced baguette.

Notes

For best results, shred your own cheese to avoid anti-caking agents. Use room temperature cream cheese for smoother melting. If dip is too thick, stir in a splash of milk or beer. If too thin, cook uncovered for 10-15 minutes.
